"Morrocan Coconut Cake"

2 cups of grated coconut
3/4 cups evaporated milk
2 cups of sugar
1 oz of butter
2 tbsp of lemon shredded lemon peels

1. Combine the coconut, evaporated milk and sugar. Simmer gently until the mixture sticks together like a ball.
2. Add the butter and lemon peel and allow to cool completely.
3. Beat the coconut until it is thick and glossy.
4. Pour into a square 8x8 pan lined with wax paper.
5. Chill and cut into square.
