Gluten-Free/ Refined Sugar-Free Corn Muffins

This is a great muffin for all who have Gluten In tolerances, Diabetes, Celiac's Disease, and/or who are trying to loose weight, etc...

  • This Muffin is sweet, but not too sweet. 
  • It's heavier than the traditional corn muffins because of  the combination of Brown Rice Flour, Almond Meal, Yellow Corn Meal, which are all heavy, but good fibers and whole grains. 
  • This is a muffin that metabolizes slowly and will not leave you with sugar spikes or quick sugar drops which can cause problems in diabetics and those who suffer with sugar blues.


This Muffin is Made with Brown Rice Flour, Almond Meal, Yellow Corn Meal, Aluminum Free Baking Powder, Agave Nectar, Egg, and Water.

  1. asm sounds very tasty. I have changed the cornbread mix I use which is made by Pamela in the health section of Kroger. It is very spendy $7 a bag for a one time use. Can you post the recipe for this.
